Introduction

This was my aunts recipe, and we grew up eating it every holiday. This recipe originally used Cheddar and Monteray Jack Cheese and no cream cheese...but it really works well with any kind of cheese. Also the original called for real butter and not country crock. This is one of my favorites...I make it all the time....and bring it for events alot. Definately a comfort food! Ingredients

    24 oz. cottage cheese

    8 oz. cream cheese (sofened)

    8 oz. Colby cheese, cubed

    8 oz. Mozzarella cheese, cubed

    22 oz spinach, thawed and squeezed dry

    6 eggs

    4 Tbsp. Country Crock Spreak (regular) (melted)

    8 Tbsp. flour

    ¼ tsp. salt (Depending on what type of Cheese I use...I may omit the sal alltogether)


    Preheat oven to 350 degrees. Grease a rectangular casserole dish.

    Mix spinach, eggs, flour, butter and salt. Fold in cottage cheese, then cubed cheeses.

    Bake in greased pan for 1 hour, until golden brown around the edges.
