    For Meat:
    1 1/2 lb pork roast
    1 tsp seasoned salt
    1 tsp black pepper
    1 small onion halved
    5 cloves garlic
    water to cover

    For Masa:
    2 cups Masa Harina
    1 tsp baking powder
    1 tsp salt
    2 cups stock from cooking meat or water
    2/3 cup lard

    For pie:
    1 lb Queso Fresco mexican cheese
    1 can green chilis
    1 small can spicy tomato sauce


Serve with sour cream.


For meat:
Place pork roast into a crock pot. Add onion, garlic, salt, & pepper. Cover with water. Set on high and let cook 12 hrs. Meat should be tender and be able to pull aprart. Remove meat from crock pot, retaing broth for use in mixing the Masa. Shred the meat and set aside.

For Masa:
Place lard in a mixing bowl and beat until light and airy. In another bowl put Masa Harina, baking powder and salt. Mix together. Add cooled broth. Mix together. Add mix to lard and mix until incorporated. It should be somewhat sticky.

To assemble the pie:
In an 8x13 pan mold masa mix to cover the bottom and sides of pan, reserving some for the top. Add shredded meat. Pour sauce over meat then crumble cheese over the mixture. Chop the canned chili's and add sprinkle over the cheese. Top with the remaining masa.

To Bake:
Preheat oven to 350. Place the pan with the pie into another pan large enough to hold it. Add water to pan to make a water bath. Cover both with foil and place in oven. Bake for 1 hour or until masa is set.
