Ingredients

    1 Tbsp toasted Sesame Oil
    1 Red Bell Pepper, seeded and chopped
    4 Tbsp Scallions, thinly sliced
    2 cups Brown Rice, small grain
    1 tsp Turmeric
    3 1/2 cups Water
    2 Tbsp Almonds, Toasted
    1/2 tsp Salt

Tips

Curves Complete: Enjoy for lunch or dinner on Phases 1 and 2 with 1 protein exchange.


Directions

1. Heat the oil in a medium saucepan. Add the pepper and scallions and sauté for 8 to 10 minutes.

2. Add the rice and turmeric and stir for 1 to 2 minutes. Add the water, bring to low simmer, cover, and cook for about 50 minutes. Allow to sit, covered, for 5 minutes. Fluff the rice and toss with the almonds, and salt.

Serving Size: Makes 6 Servings
