Ingredients

    I sheet nori
    1 can of tuna, canned in water
    1 T light mayo (I used mayo with olive oil for the calorie count.
    1 oz lemon juice
    1 T banana peppers
    1/2 small tomato, seeds removed and cut into strips
    2 T green (spring) onion, chopped

Tips

Please google images for preparing sushi rolls to see the placement of the items on the nori. It's better to see it than to read my instructions. Think 'tuna' when you see 'rice' and the rest should be the same. Feel free to mix up the veggies.


Directions

Place the nori sheet on a bamboo rolling mat. Mix the tuna, mayonnaise, and lemon juice together. Spread the mixture on the mat leaving about an inch of one edge bare. Make a line of the tomato, peppers, and onions across the width of the tuna about 2 inches from the edge. Roll the mat up and press tightly to seal. Cut into six pieces. Traditionally served with pickled ginger, soy sauce, and wasabi, but those are not included in the calorie count here.
