Introduction

I had a ham hock and some dried beans I wanted to use. This came out as a wonderful comfort food for a cold winter day! I had a ham hock and some dried beans I wanted to use. This came out as a wonderful comfort food for a cold winter day!
Number of Servings: 16

Ingredients

    1 1-lb ham hock
    1/2 lb chunked ham
    5 cups water
    2 cups homemade chicken stock
    3 sprigs fresh thyme
    1 bay leaf
    1 Tbsp dried marjoram
    black pepper to taste

Tips

Note: do not add anything to the bean water while cooking beans as that will slow down the cooking process. Beans are done when they can be easily squished between two fingers or with a fork.


Directions

Soak beans overnight. In the morning, drain and discard soaking liquid. Cover beans with 2" water and bring to a boil on the stove. Cover and reduce to simmer. Cook about 60-90 minutes or until beans are cooked.

Combine all ingredients in slow-cooker. Cover and cook overnight (about 8 hours). Remove thyme and bay leaf and discard. Remove ham hock, pull meat off bone and shred. Return meat to soup. I figure nutrition for a 1/2 cup serving because I have had gastric surgery. Normal serving sizes would be 1 to 1 1/2 cups.
