Ingredients

8 oz whole wheat rotini
2 slices Bacon
1 tbsp Country Crock (or butter)
1 cup chopped raw yellow onion
2 cloves garlic
1 tsp cornstarch
2 tsp Dijon mustard
1 cup 2% milk
3/4 cup (3 oz) 2% Sharp Cheddar
1 cup frozen peas
1/2 teaspoon salt & pepper (or to taste)
Directions
Cook pasta according to package direction. Works best "al dente."
Cook bacon until crisp. Remove bacon, reserve 3 tsp of drippings . Crumble bacon.
Increase heat to medium high. Add butter. Swirl to coat pan. Add onion and garlic, sauté for about 5 minutes. Add cornstarch. Sauté for about a minute, stirring frequently. Add mustard. Gradually add milk, whisking to mix thoroughly, and bring to a boil. Cook for about 3 minutes, until slightly thickened. Remove from heat, and let stand for 5 minutes. Place pan over low heat, and add cheese, crumbled bacon, and peas. Cook until thoroughly heated, tossing well.
