Ingredients

1/2 tbsp olive oil (I used Colavita roasted garlic olive oil)
1 boneless, skinless chicken breast
1 slice of peeled eggplant
2 slices (1 oz) low sodium deli ham
2 tbsp marinara sauce
1/4 c part skim mozzarella cheese
Salt and pepper to taste
Tips
My family is not big on poultry so we consider one cutlet to serve 2 people. 2 servings will be the full cutlet. We usually serve with a side of pasta with olive oil and crushed red pepper flakes as well as a big bowl of salad. Great for protein.
Directions
Sweat the eggplant by salting both sides and allowing it to sit for 30 mins. Wipe clean before cooking.
Preheat oven to 350.
In a frying pan heat the olive oil over medium heat. Salt and pepper the chicken (or season as preferred) and place in heated olive oil. Cook about 6 mins per side or until mostly (or fully) cooked through. Remove chicken and cook the eggplant on both sides for a few mins.
Spray a baking dish with Pam or line with foil. Layer the chicken, ham, eggplant, sauce and cheese. Bake for approximately 15 mins.
Serving Size: makes one large cutlet, 2 servings.
