Ingredients

2 ripe bananas mashed.
2-3 cups of oatmeal. (not rolled oats)
1 tsp vanilla.
1 tbsp granulated sugar
1/2 small apple, peeled and grated
1/4 tsp ground cinnamon.
Tips
Optional, before placing in oven sprinkle cookies with a mix of sugar and cinnamon. another option, add a handful of chopped nuts, raisins or chocolate chips for variety.
Directions
mash banana in a bowl. add vanilla, cinnamon, sugar. and grated apple. Add 2 cups oatmeal . if mix is too soft, add more oatmeal until semi firm. Form into pingpong ball sized balls of dough, place on greased cookie sheet (or use parchment) flatten and form until 1/3 inch high. bake in preheated 350 oven for 10-15 min or until golden.
