Crustless, low fat quiche Crustless, low fat quiche

Ingredients

    2 large eggs
    1/2 c egg whites (aprox 3 large eggs)
    5 oz evaporated milk
    2 tbsp dijon mustard
    1/2 tsp salt
    1/4 tsp pepper
    1.5 tsp olive oil
    12 grape tomatoes (sliced in half)
    spinach 10 oz package
    mushrooms 10 oz package
    4 oz feta crumbled

Directions

Saute mushrooms in 1 tsp of olive oil and set aside. Saute spinach and tomatoes in 1 tsp of olive oil.

Whisk together egs, milk mustard, salt and pepper.

Add cheese, cooked mushrooms, spinach and tomatoes to pie plate. Top with egg mixture. Bake at 400 degrees for 25 minutes.
