    2 very ripe medium bananas
    1 1/4 cups all-purpose (white, unbleached) flour
    3/4 cup sugar (I used half white and half brown)
    1/4 cup unsweetened cocoa powder
    1/3 cup canola oil
    1/3 cup water
    1 teaspoon baking soda
    1 teaspoon white vinegar
    1/4 teaspoon salt
    1/3 cup semisweet chocolate chips (vegan such as "enjoy life" brand or bulk barn dark)


Very good; moist, dense and satisfying.
Doubled recipe and used 5 bananas total.


Heat oven to 350
Mash bananas or blend with electric beater.
Blend in wet ingredients and brown sugar.
Sift dry ingredients together then add to wet.
Blend well then pour into 8X8 square cake pan. (May choose to line the bottom with parchment paper)
Sprinkle chocolate chips over batter.

Bake about 35 minutes or until toothpick inserted in the center comes out clean. Cool completely, about 45 minutes.

Serving Size: Makes 16 slices
