Ingredients

* Crust *
1c Flour
1/2 tsp Salt
1/3 c Unsalted Butter
1c Lactose- Free, 1% Milk
* Filling *
6 lg Eggs
1/2c Milk
4 oz Shredded Aged Cheddar Cheese**
1 tsp Salt
1 tsp Pepper
Tips
** cheddar aged over 24 months is naturally lactose free!
Directions
To Make Crust:
1. Mix Flour and salt.
2. Cut in chilled butter. (by hand is best as it allows for larger chucks of butter which result in a flakier crust)
3. Add milk
4. Refrigerate 20 mins
To Make Pie
1. While crust is chilling, shred cheddar
2. Whisk Eggs
3. Add milk, salt, pepper and cheese to eggs
4. Preheat oven to 350 degrees
5. Remove chilled crust from refrigerator and roll out on a floured surface
6. Place rolled crust in a 9" pie pan (I've found that a ceramic pan eliminated the need to pre-bake the crust)
7. Add egg mixture to pie pan
8. Bake for 35 minutes or until solid and browned on the top
