Ingredients

15 raw shrimp, peeled and deveined
2 tbsp olive oil
1 tbsp shallot minced
1 tbsp garlic minced
2 tbsp red wine or red cooking wine
1/2 can tomato paste
3/4 cup chicken broth
3 tbsp McCormick cajun seasoning
1 tsp basil
1 tsp oregano
salt and pepper to taste
1/4 cup scallions
4 servings of your favorite shaped pasta
Directions
Makes 4 servings:
Peel and devein shrimp. Set aside.
Heat olive oil in large skillet.
Sautee garlic and shallots over low heat until soft.
Add chicken broth and tomato paste.
Add cajun seasoning, basil, and oregano.
Add salt and pepper.
Stir until smooth.
Bring to a simmer.
Add red wine and mushrooms. Let thicken for 2-3 minutes.
Add shrimp to sauce in a single layer and sautee until pink.
Remove shrimp from sauce.
Add cream and stir until thick.
Toss shrimp, sauce, and cooked pasta together in a large bowl.
Garnish with scallions.
