Ingredients

    1/2 Cup Blue Bonnet Light Margarine
    1 Cup Splenda Brown Sugar Blend,
    3 tbsp Domino Pure D'Lite Sweetner
    2 Egg whites
    2 tsp Vanilla Extract
    1 3/4 Cup Wheat flour, white, all-purpose, unenriched
    1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Salt
    1 1/2 tsp Espresso coffee powder
    3/4 cup Nestle Mini Chocolate chips

Directions

Preheat oven to 300
Cream the butter with the sugars using an electric
mixer on medium speed until fluffy (approx. 30 secs)
Beat in the egg and vanilla extract for another 30 secs
In a mixing bowl, sift together the dry ingredients and
beat into the butter mixture at low speed for 15 secs
Stir in the espresso coffee powder and chocolate chips
Drop cookie dough onto a greased cookie sheet
Gently press down on the dough with the back
of the spoon. Bake for about 17 minutes or
until brown around the edges.

    recipe was great even though I chose to omit the expresso powder - 2/26/08
