Introduction

You can use boneless, skinless chicken thighs for this but for cost and taste reasons, I prefer buying regular chicken thighs and removing the skin and excess fat myself. Nutrition facts are calculated based on my preference, so they may be a little lower if you go the boneless, skinless route. Regardless, this is a very tasty way to eat baked chicken thighs. Ingredients

    12 boneless skinless chicken thighs
    3/4 cup ketchup
    1/2 cup salsa
    1/4 cup honey
    1 tablespoon prepared mustard
    1 teaspoon chili powder
    1/2 teaspoon ground cumin

Tips

You can use honey mustard or Dijon mustard if you prefer.


Directions

Preheat over to 400 degrees F.

If using chicken thighs with bone/skin, remove the skin and excess fat with a sharp knife.

Arrange chicken thighs in a single layer 13x9 baking dish.

In a separate bowl, whisk together the ketchup, salsa, honey, mustard, chili powder, and cumin until well blended.

Pour the sauce over the chicken.

Bake uncovered for 45 minutes.

Serving Size: makes 6 two-thigh servings
