Ingredients

    3 labs eggplant (about 2 large peeled and cut 1/2-in slices

    Sea Salt to taste

    3 med. shallots, finely-chopped

    1 medium garlic clove, minced

    1/2 Cup red wine vinegar

    1/8 cup EVOO

    1/4 teaspoon pepper

    1/2 tablespoon fresh basil, finely-chopped

    2 red sweet peppers, cut into halves

    Add feta cheese to taste

Directions

Preheat oven to 400.

Place the eggplant pieces in a large colander and sprinkle with sea salt evenly,

In a large roasting pan, stir together the shallots, garlic, vinegar, olive oil and pepper. Place the eggplant slices and peppers into the roasting pan and coat evenly.

Roast for about 30 minutes, turning once.

Serve on a grain roll, topped with feta cheese
