French Toast (Gluten Free)

2 Slices Glutenfree bread (I used Udi's whole grain bread)
1 teaspoon olive oil
3 egg whites
1/4 cup almond milk unsweetened (or coconut milk)
1 teaspoon Cinnamon
1/2 teaspoon vanilla stevia
1/4 cup of watermelon,diced
1/4 cup of pineapple, diced
1/4 cup grapes, whole
1 piece Wegmans Organic Food You Feel Good About Uncured Bacon, Apple Wood Smoked
Serve the french toast plain or try it with 1/2 tablespoon of Olivio coconut oil spread and if you want sweetness try Sprague farms pure maple syrup. Also tastes good with fresh fruit preserves. I made enough for 4 servings and froze the rest in Ziploc freezer bags for a quick easy breakfast during the week.
Cook bacon in oven according to directions on package.
Dice watermelon and pineapple. Toss in a bowl with grapes.
