Ingredients

2 chicken breasts
1 t salt
1 t pepper
1 1/2 T Olive Oil
1 medium Onion, thinly sliced
2 cloves garlic
1 14oz can lite coconut milk
1 14.5 oz can diced tomatoes
1 8oz can tomato sauce
3 T splenda
Tips
**As with any curry, heating the oil and curry powder for the full 5 minutes is crucial!
**I like to serve mine over couscous, brown rice, or spinach for a fun lunch!
Directions
1) Season chicken breasts with salt & pepper
2) Heat oil and curry powder over medium heat for 5 minutes in large skillet, stir in onions and garlic. Cook another 2 minutes
3) Add chicken and cook on medium for 7-10 minutes
4) Pour coconut milk, tomatoes, tomato sauce and splenda into pan
5) Cover and simmer on low for about 1 hour
Serving Size: 6 servings; making 1/3 chicken breast each
