These are wonderful! I've been looking for a recipe to help curb my sweet tooth without going overboard on calories or carbs. You can tailor these to all the members of the family by adding a couple of chocolate chips, nuts, berries, craisins, or raisins to the top. The nutritional info is without the optional ingredients. Number of Servings: 24

Ingredients

    2 eggs
    1/2 cup applesauce
    1/3 cup brown sugar, packed
    1 & 1/3 cup skim milk
    2 tsp baking powder
    1/4 tsp salt
    2 tsp cinnamon
    3 cups of oats
    (optional) nuts, chocolate chips, berries, and/or raisins for the top.

Directions

preheat the oven to 400 degrees

spray muffin tins or wrappers (I use silicone) with non-stick spray.

Mix together egg, applesauce, brown sugar & skim milk. Then add baking powder, salt, cinnamon & oats.

Fill 24 muffin wells/wrappers about halfway. Add any optional toppings.

Bake for 20 minutes.

Serving Size: makes 24 individual muffin sized pieces.
