Introduction

A good vegan protein bar that is quick to make and very high in protein, with low saturated fat and sugar. These bars are mildly sweet and have a chewy texture. Ingredients

    120g (about 1 cup) of fortified soy protein powder (Genisoy brand was used for the nutrition calculations)
    6 tbsp cocoa powder
    4 tbsp ground flax seed
    3 tbsp agave nectar
    6 tbsp creamy peanut butter
    1.5 cups water (more or less according to your desired texture)
    1 cup muesli cereal

Directions

Combine protein powder, cocoa, and flax seed in a bowl. Add agave nectar, peanut butter, and water. Stir until well combined. Mixture should hold together well and be easy to form into a ball. Add muesli and stir or knead with hands until well mixed. Press onto a wax paper covered pan and mold into a rectangular shape. Score into 8 pieces and refrigerate until well chilled. Once chilled, separate individual bars and store in an airtight container or wrap in plastic.
