My Greek salad with cucumber, tomatoes and feta. My Greek salad with cucumber, tomatoes and feta.
Number of Servings: 6

Ingredients

    2 cups Cucumber, peeled, chopped
    2 cups Tomatoes, chopped
    3/4 cup Green Bell Pepper, chopped
    1 cup Onion, chopped
    1/2 cup Feta Cheese, crumbled
    1/2 cup Kalamata Olives, pitted
    1/4 cup Parsley, flat leaf, minced (or dried use 1/2)
    1 Tbsp Basil, minced (or dried use 1/2)
    2 Tbsp Olive Oil, Extra Virgin
    1/4-1/3 cup Red Wine Vinegar
    2 cloves chopped/minced garlic
    Salt & Pepper to taste

Tips

These are all estimates, just put it together until you get the right looking mix. Great in the summer.


Directions

Clean, chop and mix all ingredients together. Best if chilled for a couple of hours to let the flavors marinate.
