Introduction

Ingredients

    2 medium onions, large dice
    1 red pepper, large dice
    1 cubanelle pepper, large dice
    1 (15ounce) can diced tomatoes

    3 Tbsp flour
    1 Tbsp garlic powder
    1 Tbsp paprika
    1 tsp salt
    1/2 tsp pepper
    2 skinless boneless chicken thighs

    1 Tbsp olive oil
    2 Tbsp tomato paste
    1 1/5 cups chicken broth

Directions

In a slow cooker, layer onions, all peppers and tomatoes.
Mix flour, and spices together in a ziploc bag. Add chicken thighs and toss to coat. Heat oil in a large skillet. Add chicken to pan and brown on both sides. Remove chicken from skillet and add to slow cooker. Add tomato paste and chicken broth to the skillet to remove all the cooked bits on the bottom of the pan. Add this sauce to slow cooker. Cook on low for 6 hours or on high for 3 hours. Serve over rice.
