Ingredients

    4 0z Chicken breast
    1 small onion chopped
    1 tbsp curry powder or paste
    1/2 cup water
    1 cup of mushrooms sliced
    1 medium tin chopped tomatoes
    2 tablespoons oil

Directions

Heat the oil in a wok, and gently fry the onions until translucent, add the curry powder and cook for 1 minute to ensure the raw taste is cooked out.
Add the chicken and cook until tender.
Add the mushrooms and cook for 2 minutes
Add the tomatoes and continue to cook for 5 to 10 minutes. Water can be added to get the curry to the right consistency that you like.

I tend to add other vegetables that Iike to add variety.
