Ingredients


    Banana, fresh, 8 medium (7" to 7-7/8" long)
    Granulated Sugar, 1 cup
    *Splenda, 48 tsp
    Shortening, .5 cup
    Butter, unsalted, (room temp) .5 cup
    *Flour, white, 4 cup
    Baking Powder, 2 tsp
    Salt, 2 tsp
    Baking Soda, 2 tsp
    Egg, fresh, 4 large

Tips

Makes a very moist and soft bread. If you like it chewier, use less banana and mix longer before baking. Over-mixing will make it tough so be careful. I bake mine in standard or mini loaf pans coated in cooking spray. Adjust cooking time based on size of pan.


Directions

Mash bananas with sugar and Splenda (1 CUP each), let sit at least 15 minutes.
Meanwhile in a separate bowl beat eggs well.
Dissolve baking soda in 2 T warm water.
Sift together dry ingredients.

After the 15 minutes has passed, combine all ingredients and mix until just incorporated.

Bake at 350 until done, 35-50 minutes.
