Ingredients

    1 lb. Beef Stew meat, chuck, cubed
    1 cup Onion, diced
    1 cup celery, diced
    1.5 cup baby carrots
    2 cup potatoes, cubed
    1 cup sweet potatoes, cubed
    3 cups of Beef Broth, low sodium
    0.5 cup Baby Bella Mushrooms, diced
    1 tsp. Coriander, ground
    1 cup of frozen peas
    1 Tbsp Corn Starch
    enough water to make a corn starch slurry
    Salt and pepper to taste


Directions

Combine beef stew meat, onion, celery, baby carrots, potatoes and sweet potatoes and beef broth in crock pot. Season with coriander, salt and pepper. Cook on low for 8 hours. Add frozen peas. Turn up to high. Make a slurry with corn starch and a little water. Add to bubbling stew. Continue to cook on high until slightly thickened. Serve. Makes 8, 1 cup servings.
