Kids and adults seem to love this dish! It is very yummy, nutritious and can be reheated easily in the microwave. Especially great for families with hungry teenagers or when you need a delicious meal that has been prepared earlier, is refrigerated and ready to be heated in the oven or the microwave throughout the week. Ingredients

    1 Tbsp oil
    1 lb lean ground beef
    1/4 lb lean ground pork
    1 clove garlic (minced)
    1 medium onion (chopped)
    1 tsp salt
    1 can tomato soup
    1 28 oz can diced tomatoes
    15 oz frozen peas and carrots
    1 8 oz can corn, whole niblets (drained)
    1/2 bag, (170 g) No Yolks, extra broad noodles (cooked)
    2 cups shredded cheddar cheese


Tips

It is not necessary to bake the entire casserole in the oven. You can refrigerate it and family members can heat individual servings on a plates or in bowls in a microwave. Will keep well in refrigerator for an entire week.

Directions

1. Add oil to a very large frying pan or dutch oven and cook beef and pork together, on medium high, on top of stove until all redness is gone (approx 5 minutes).

2. Add garlic, onion & salt. Stir and cook another 3 - 5 minutes.

3. Add can of tomato soup, can of diced tomatoes, frozen peas and carrots, and corn. Stir and cook together on medium heat for 5 - 10 minutes or until hot.

4. Cook and drain 1/2 package of No Yolks, extra broad noodles.

5. Mix everything together and pour into a 4 litre covered casserole dish.

6.Spread shredded cheese on top and cover.

7. Refrigerate for later use or bake in oven on 325 for one hour, or until heated through.
