Ingredients

    Egg, fresh, 10 large
    Onions, raw, 400 grams - CHOPPED
    Red Ripe Tomatoes, 300 grams - SLICED thin
    Gammon steak, 400 gram - CHOPPED
    Green Peppers (bell peppers), 260 grams - CHOPPED
    Yellow Peppers (bell peppers), 300 grams - CHOPPED
    Red Leicester Cheese, 65 gram(s) - GRATED
    Cheddar Cheese light, 170 gram(s) - GRATED
    Extra Virgin Olive Oil, 2 tbsp

Directions

Chop the vegetables in small squares and saute them in a deep pan using the olive oil. Add the gammon and saute for 5-10 minutes, till everything is tender.

Mix the eggs in a large bowl.

Put the vegetables and gammon mix in a large pyrex dish. Sprinkle the grated Red Leicester and cook for 10 minutes at 200 degrees. Remove from the oven and layer on top the tomato slices; sprinkle the grated cheddar; cover with tin foil and cool 20 more minutes.
Remove the tin foil and cook for 15 more minutes till the cheese is golden brown. Yum.
