Number of Servings: 6


    1 lb. spaghetti or angel hair pasta
    6 T. olive oil
    8 cloves garlic*, crushed or minced
    zest of one lemon*
    juice of one lemon*
    10 oz bag of baby spinch

    (Tomatoes, parmesan, and/or roasted chicken if desired.)

    *1 clove garlic = 1/2 t. minced garlic, 1/8 t. garlic powder
    *1 t lemon zest = 1/2 t. lemon extract, 2 T lemon juice
    *1 lemon = 2-4 T lemon juice
    *zest of 1 lemon = 1 1/2 t. lemon extract or 6 T of lemon juice.




In skillet heat 6 T of olive oil over medium heat. Add garlic & cook for 10-12 minutes. Add lemon zest and juice. Season with salt and pepper.

Cook pasta as package directs. Drain and transfer to a large bowl. Immediately add spinach and garlic lemon garlic oil and toss together. Mound on large platter and garnish w/ tomatoes, parmesan, and/or chicken if desired.
