Ingredients

16 oz of firm tofu
1.5 Tbsp of Dijon mustard
1/4 cup + 2 Tbsp of nutritional yeast
1 Tbsp of water -or- lemon juice
1 Tbsp of onion powder
1 Tbsp of garlic powder
1/2 Tbsp of turmeric
1/4 cup of cornstarch
1/2 tsp of salt
3 cups of spinach, chopped
Tips
I cut out the red pepper flakes and reduced the amount of greens slightly.
Directions
Preheat oven to 350 degrees F. Grease a 8x8 casserole and set aside.
Put all ingredients except spinach in a food processor or blender. Process until smooth. Add spinach and mix thoroughly. Add to casserole dish, using spatula to smooth out.
Cook 30 to 40 minutes or until top is golden and firm. Allow to cool at least 10 minutes before serving.
