Ingredients

Black beans - 1cup
Tofu (lite) Azumaya - 8oz
Oats - 1/2 c ground in food processor
Onion - 1 chopped medium onion
Basil - FRESH basil, as many leaves as you like
Garlic - 4 cloves or as many as you like
Dijon Mustard - 2 TBSP
Chipotle powder - 1 tsp
Salt - 1/2 tsp
Egg - 1
Directions
Rinse 1 black beans and drain in colander.
Smash beans a little bit with a fork.
Dump beans in large bowl and mix in rest of the ingredients. Stir together well.
Let sit for 5-10 minutes as pan heats up over medium heat. Use 1/4c measure and drop 1/4 of mix into frying pan, pat down a little bit to flatten and form patty.
Cook until golden brown on one side them flip to other side. 4-6 minutes depending on your stove top.
They may be slightly crumbly. You can add a little more ground oats or 1 more egg if you like. I may play with the recipe a little bit the next time I make it.
Each patty is 55 calories, 1.1g fat, 7 carbs, 4 protein.
