Ingredients

Chicken Breast, about 2 lbs., cut into 1 inch chunks, cooked
1 onion, halved then sliced
2-3 large carrots, peeled and sliced on the bias
1 can coconut milk
1 C couscous cooked according to directions
cilantro, chopped
Tips
add more curry if you like, or hot curry. Cilantro in the couscous adds a wonderful depth of flavor--you shouldn't skip it.
Directions
chop chicken into 1 inch pieces, cook until done. Set aside.
Halve onion, then slice to make half moons. Slice peeled carrots on the bias. Add to pan that chicken was just in. Cook about 5 min until crisp-tender. Add 1 can coconut milk, 2 tsp curry powder, chicken to skillet and cook until thickened (about 7 min)
Add cilantro to hot, cooked couscous and stir.
Add 1/2 C of couscous to plate, server curry chicken over top.
