Introduction

Ingredients

    1 bag split peas (I used Goya)
    1 large sweet onion, chopped
    2 large carrots, chopped
    2 stalks celery chopped
    3 tsp. fresh thyme, chopped
    1 bay leaf
    3 c Kitchen Basic Unsalted Chicken Stock (you could sub water, but this makes extra flavorful soup)
    1 tbsp black pepper
    3 cups ham (I just stuck the bone part in, but you can cube it if you'd like)

Tips

By putting in the "leftover" ham whole, I got big chunks of shredded ham in the soup (similar in texture to pulled pork). The ham chunks were easily cut with a spoon, and added a nice texture to the soup. You could also just put cubed ham pieces in, but that would probably give a different texture. Enjoy!


Directions

Pour split peas into slow cooker. Place ham on top, followed by chopped vegetables, thyme, bay leaf, and pepper. Pour stock over everything, and cook for 8 hours on low. Remove ham bones (if necessary) before serving.
