Ingredients

    3 cups frozen hash browns, thawed
    1 cup (4 oz) shredded mozzarella cheese
    1 cup finely diced ham
    1 cup (4 oz) shredded Monterey Jack cheese
    6 large eggs, lightly beaten
    1 cup skim milk (half & half if desired)

    1. Place hash browns in a sprayed 13 x 9 glass cake dish. Bake 20 minutes at 400 deg. Remove from oven and reduce temp. to 350 deg. Sprinkle Mozzarella cheese over potatoes, then the ham and then the Monterey Jack cheese.

    2. In small mixing bowl combine the eggs, milk and flour. Pour over cheese. Bake, uncovered, about 35 - 40 minutes or until center is set. Makes 4 servings.

Tips

Center is set when knife inserted in center looks fairly dry. Casserole will continue to cook somewhat in the center if allowed to stand about 10 minutes.
