Introduction
Thanksgiving will have to come round more than once a year at your table once you include this tasty treat. It's not over sweet, and its fat comes from the nuts, not butter. Ingredients

Peeled sweet potatoes: 6
Orange: juice & pulp only
Olive oil, 1 Tbs for bottom of pan & 2nd layer of potatoes
Good quality REAL MAPLE SYRUP (not imitation or flavored) 3 Tbs drizzled over potato slices
Sprinkle cinnamon & ginger over each layer of the potato slices
Pour egg beaters (1 small container = 2 servings) over the potatoes. Pour about 1/2 small container water over the egg substitute to wash it down into the casserole plate.
Top with 1/2 Cup of chopped pecans.
Cover with lid or foil & bake for one hour at 350 degrees in preheated oven.
Take lid off during last 15 minutes.
Tips
You can bake the potatoes in microwave & scoop out flesh for fluffy casserole. This also bakes ahead & reheats well.
Directions
Preheat oven to 350 degrees
Spray casserole pan with Pam or other cooking spray
Cook for 60 minutes, uncovering during the last 15 minutes.
