Ingredients

    12 ripe roma tomatos,
    3 anaheim chilis roasted, skined and seeded
    1 pasilla chile roasted skinned and seeded
    2 jalapenos
    1 bunch cilantro
    2 med white onions
    3 cloves garlic
    1/4 cup lime juice
    1/4 cup white vinegar
    1 tsp cumin
    1 tsp salt
    more chili powder to taste
    1 tsp mexican oregano

Tips

this is a low sodium recipe! I love salsa and was astounded when I saw how much sodium is in the commercial salsa! besides mine is better!


Directions

roast the anaheim chilis, skin and take out seeds put in food processor with all other ingredients thru garlic, pulse til its the right sized chunks to your liking. may do in small batches if you like as to get uniform sizes. Put in big mixing bowl add spices and liquids and stir til mixed. Thats it! you can cook it and can it if you like and obviously this is a large batch so you would need to or have it for a party!
