Introduction

I loved the Crescent Roll Cheesecake recipe that has been all over the internet, but needed to make a sugar-free, low-carb version. This turned out great! Ingredients

3 low carb pita bread rounds (such as Toufayan
16 ounces full fat cream cheese softened
    1 cup Splenda or sucralose
    1 tsp. real vanilla extract
    1/2 cup real butter, melted

Topping: mix 1 tsp. ground cinnamon and 5 tsps. Splenda.

Split 3 low carb pitas in half so there are two very thin layers. Spray a 9"x13" pan with no-stick spray and put 2 whole pieces of pita in the bottom, then divide 1 more piece into small pieces to fill in the bottom of the pan. Save the remaining 3 halves for the top.

Mix softened cream cheese, 1 cup Splenda, and vanilla with mixer until creamy and smooth. Drop onto pita bread in pan, and spread to cover.

Put remaining thin pieces of pita bread on top, breaking one into pieces to fill in. Pour melted butter over the top of this evenly, then sprinkle with topping.

Tips

You can also use Joseph's Flax & Oat Bran Low-Carb Pita bread, but it is slightly more chewy.
