Ingredients

5 pork loin chops - lean and trimmed
For Pork Marinade:
2 Tbs of curry powder
1/2 Tbs of Star Anise, ground
1 tsp of ground mustard seed
1/4 tsp of allspice
2 cloves of garlic chopped (for the garlic lovers)
1/4 cup of olive oil
Chili pepper flakes to preference
For Raita:
4 oz container of plain non-fat yogurt
1/4 cup of chopped roasted walnuts
1 squirt of lemon juice (approx 1 tsp or to taste)
1 tsp of roasted garlic chopped
a dash of salt
Tips
*Try with roasted chickpeas!
*Delicious with lemon water!
Directions
*Prepare marinade and coat pork evenly
*Refrigerate for 20-30 min
*Heat oven to 350
*While pork is marinating- mix ingredients for Raita and taste to make sure it has enough salt and lemon for you and then refrigerate so it will be a nice cooling sauce for later
*Lay pork on a lightly oiled cookie sheet and place sliced onion on each pork piece
*Put pork into oven for 40 minutes or until cooked through
*When done add raita sauce on top or on the side
Serving Size: Makes 5 generous portions
