Introduction
This recipe was my kids fave Sunday morning tradition. Very impressive to serve at a brunch as it puffs right up. Serve coming right out of the oven with greek yogurt and maple syrup, this is a delicious high protein Sunday morning treat. This recipe was my kids fave Sunday morning tradition. Ingredients

Apples
Butter
Cinnamon
Brown sugar
Eggs
Milk
Vanilla
Spelt flour
Sea salt
baking powder
Directions
Preheat oven to 350F. Wash and core apples. Thinly slice apples and place at the bottom of a 9"x9" pyrex pan. Sprinkle with HALF of the brown sugar then add cinnamon and butter. Cook for 10 minutes.
While this is cooking:
Beat together eggs, milk, vanilla and sugar.
In another bowl, mix together spelt flour, salt and baking powder.
Add flour mixture to wet ingredients and mix. Do not overmix.
Take apples out of the oven, carefully stir them around to get caramalized butter, sugar and cinnamon onto every apple.
Pour wet mixture over the apples. Sprinkle remaining brown sugar over the top. DO NOT STIR.
Place in oven for approximately 35-40 minutes or until you see the top golden and the entire combination doubled in size.
Serve with greek yogurt and real maple syrup. To make this really piggy, serve with real whipped cream instead of greek yogurt.
