Ingredients

    1 stalk celery, chopped
    1 cup mushrooms, chopped
    1 small onion, chopped
    1 28 oz can crushed tomatoes
    2 beef stock cubes
    2 cups water
    1 tsp sugar
    1 tsp ground cumin
    1 tsp ground paprika
    125 grams uncooked pasta
    500 grams uncooked extra lean beef mince
    1 tsp olive oil

Directions

Heat a large non-stick frying pan over high heat. Dry-fry the mince until browned. Add the onions, celery and mushroom with olive oil and cook, stirring for 5 minutes.

Reduce the heat to low and add the paprika and cumin. Cook for 1 minute, add the tomatoes, stock, sugar and pasta. Cover and simmer for 25 minutes stirring occasionally.

Stir in chopped parsley (optional) and season to taste with salt and pepper. Serve, piping hot, laddled into warm soup bowls.
