Introduction
I used a gluten-free flour or rice flour instead of almond and coconut and still got great results. Add liquids slowly as my first batch was too runny and had to add more gf flour. Ingredients
-
3 scoops of protein powder (I used unflavored but you can use any flavor you want)
3 egg whites
1/4 cup almond flour
2 tbsp coconut flour
2 tbsp coconut oil
1 ripe banana
1/2 tsp cinnamon
1 tsp vanilla extract (you dont need this if your protein is flavored)
1/2 tsp baking powder
1/4 cup (estimate) unsweetened almond milk
1 tsp Truvia (optional)
Directions
So I combined everything with 2 tbsp of almond milk in a blender. Then I added the almond milk until I got a pancake consistency. It ended up being 1/4 cup but depending on your protein you may need more or less so I would add slowly.
Then just cook as pancake. Technically I guess whey protein is not Paleo(?) so these are Paleo-ish.
Serving Size: Makes about 12 pancakes - 3 per serving.
