Ingredients

    4 green onions
    1/4 cup olive oil
    1/4 cup lemon juice
    1 tablespoons white wine vinegar
    1 tablespoons honey
    1 teaspoons ground coriander
    1 pounds brussel sprouts
    2 oranges, peeled and sectioned, or 3/4 cup mandarin oranges
    1/2 cup cashews, toasted
    1/2 teaspoon kosher salt

Tips

* To trim brussel sprouts, cut off the stems just at the spot where the leaves start to grow. Remove dark green outer leaves until the tender, light green leaves are uniformly exposed.

Variations: Out of brussel sprouts(?) - Use 10 cups shredded napa cabbage. No oranges(?) - Substitute 2/3 cup dried cherries and/or cranberries. Prefer almonds(?) - Use toasted sliced or slivered almonds in place of the cashews.

To Make Ahead: Prepare as directed. Cover and chill for up to 4 hours.


Directions

1. For dressing, chop green onions, keeping the white parts separate from the green tops. In a blender, or food processor, combine the white parts of the onions, oil, lemon juice, vinegar, honey, and coriander. Cover and blend or process until smooth; set aside.

2. Trim brussel sprouts thinly*. In an extra-large bowl combine brussel sprouts and the green tops of the onions. Pour dressing over sprout mixture; toss gently to coat. Add orange sections, cashews, and salt; toss gently to combine.

Serving Size: Makes 8 side servings

    I loved this recipe so much! I will def be making it again. I added garlic because it just screamed for it. Other than that a great go to for brussel sprouts. (I also left out the oranges as I don't care for them in salad. Yummy! - 3/3/20
