Directions
Bake chicken at 375 for 40-50 minutes or until done.
While chicken is baking, clean potatoes with cold water, then dry. Rub a little vegetable oil (or any preferred oil) on each potato to coat and sprinkle a little salt on each for taste. Once chicken is done baking, remove from oven and set aside to cool. Turn oven up to 400 and place potatoes on rack(do not wrap them in foil, this will make them soggy). Bake for about 45 minutes. While those are baking, shred chicken and mix in BBQ sauce. Once potatoes are done remove from oven and open them. Sprinkle cheese inside and place back in the oven for about 3-4 minutes or until cheese is melted. Take out, add shredded BBQ chicken, and sour cream on top. Enjoy!
