Ingredients

    Black Beans, canned (1 regular can, preferably in spiced sauce)
    Niblets corn, canned (1 small can)
    Pimentoes, jarred (1 jar)
    Avocados, 2, cut into small cubes
    White wine vinegar, 1T or to taste
    Southwest spices to taste (cumin, onion powder, adobo, etc)
    salt and pepper to taste

Tips

Looks best if you stir all ingredients except the avocado first, then add avocado last - otherwise, it gets mushy and the avocado ends up coating the other ingredients. Tastes good either way, though!


Directions

Mix all ingredients, let sit overnight for best flavor
