Ingredients

1 Tbsp Canola oil
13.5 oz kielbasa, cut into bite sized pieces
1 pound shrimp, peeled and deveined
1 cup onion, chopped
4 cloves of garlic, minced
1 Tbsp of all purpose flour
2 cups of low sodium reduced fat chicken broth
1 red bell pepper, cut into strips
2 cups of frozen okra, defrosted
1 Tbsp chilli powder
1 Tbsp dried oregano
1 Tsp dried thyme
2 bay leaves
juice of one lime
salt and pepper to taste
Tips
Run frozen okra under water for about a minute to wash away any chunks of ice and defrost it.
Directions
Fry sausage in oil in batches, dry them in paper towels.
After removing sausages from pan, sauté onions until they are translucent. Then add the garlic and sauté until it is fragrant.
Stir in the spices (chill powder, oregano, thyme, and bay leaves).
Sprinkle the flour and stir constantly to brown it for about 3 minutes.
Deglaze with one cup of chicken broth. Let it thicken a bit and then add the peppers and okra.
Cook those for about 3 minutes, add the shrimp, and top it with the lime juice.
Add more chicken broth if needed, if you would like it more stewy and less liquidy, don't add the full second cup of broth.
Add the sausage and let the tastes marry each other for 10 to 15 minutes. Add salt and pepper to taste.
