Ingredients

20 oz Tyson Grilled Chicken Breast Strips
1 pkg McCormick Taco Seasoning mix
1 can black beans, drained
1 can mild Rotelle Tomatoes & chilis
1 can Old El Paso Mild Enchilada Sauce
8 Mission 96% fat free flour tortillas (small)
1 cup Kraft 2% Sharp Cheddar finely shredded cheese
Tips
Tyson Grilled Chicken Breast Strips are in the freezer section of your grocery store.
Directions
1. Brown chicken breast strips in skillet over med-hi heat.
2. Add black beans, taco seasoning mix, and Rotelle tomatoes to skillet, stir, simmer another 5 minutes.
3. Lightly spray 9x13 baking dish with Pam cooking spray.
Spread about 1/3 of enchilada sauce in bottom of dish.
4. Place 4 tortillas in bottom of dish, overlapping slightly.
5. Pour chicken mixture over tortilla shells.
6. Place remaining tortillas overtop.
7. Pour remaining enchilada sauce overtop, covering evenly.
8. Sprinkle cheese overtop, covering evenly.
9. Bake at 350° for about 20-30 minutes, until bubbly.
