Number of Servings: 6

Ingredients

    2 large yams, peeled and cubed (6 - 8 cups)
    1 12oz can Swanson 98% Fat-Free chicken broth
    Water
    Salt & Pepper (optional)

Directions

Put cut up yams into large pot, empty can of broth into pot and add water until yams are covered enough to boil.
Boil on the stove until yams are tender and mash with a fork when pressed.
Drain yams, reserving liquid.
Place drained yams back into pot or bowl.
Using a potato masher, mash yams with some of the reserved liquid until smooth and creamy. Season to taste.
