Introduction

Ingredients

1 large chicken breast, diced
1 small onion, chopped
2.5 cups cooked rice
2 cups broccoli
1 cup chopped spinach
1 packet dry cream of chicken soup
2 cups milk
4 ounces Velveeta cheese
3/4 pkg Kraft QuickMelt Cheese
1 sleeve Ritz Crackers
Tips
I have grated 2 medium carrots and mixed them in with the rice as well for more veggies.
Directions
1) Prepare rice first, if not already done.
2) In skillet, cook diced chicken and onion together, until chicken is cooked through (season chicken according to personal tastes). Add spinach and cook until just wilted.
3) In microwave, heat broccoli until it is just tender.
4) In 9 x 13 Casserole dish, combine rice, broccoli, chicken and spinach.
5) In same skillet, combine cream of chicken soup mix, with enough water to reach desired consistency. Add cheeses and 1.5 cups milk, stirring constantly.
6) Once cheese mixture has reached desired consistency, turn off heat and pour cheese over rice mixture in casserole dish. Mix thoroughly.
7) Crush the Ritz crackers and sprinkle evenly over the top of the rice mixture. Pour the remaining 1/2 cup milk over the the crackers to moisten.
8) Cook at 400 degrees for 15 minutes, or until thickened.
