Number of Servings: 6

Ingredients

    1 lb Turkey
    2 medium/large Sweet Potato
    10 spears Asparagus
    1/2 Red onion
    5 large Eggs
    1 Tsp salt
    1 Tsp pepper
    1/2 Tsp garlic powder
    4Tbs Coconut oil

Tips

Can be done without coconut milk.

Any oil you like as a flavor can be substituted.


Directions

Heat 2 Tbs coconut oil on high heat, add onion asparagus and sweet potato, reduce heat to medium and cover until sweet potatoes are at desired tenderness.

In another pan brown Turkey in the remaining coconut oil.

When potatoes are desired tenderness add turkey mix well then add eggs, salt, pepper coconut milk and garlic.

Let simmer for about 10 min. Take off heat and let sit for 5 min.

Serve and enjoy!
