Ingredients

    1.5 C brown lentils, rinsed
    3 C. water
    1/2 C. diced onion
    3 garlic cloves, minced
    1 T. olive oil
    1/2 can diced tomatoes, canned
    (spices: turmeric, paprika, cayenne, salt, pepper)


Tips

I did not add the spice amounts because I'm only adding this for the nutrition info


Directions

Saute onion and garlic in olive oil. Add lentils and water, cook until lentils are soft. Add tomatoes and spices and cook until the liquid has been absorbed.

Serve on corn tortillas with cheese and sour cream, if desired.

Serving Size: Filling serving size: 1/4 C. of mix per taco (12 servings per batch)
