Introduction

Ingredients

2 - 3 T Olive Oil
1/4 c chopped onion
1/4 c chopped carrot
Celery 1 stalk chopped
Parsley 4 T Fresh chopped
Peas 1 c frozen thawed
New Potatoes 1c (I use leftover oven baked small potatoes)
Leftover steak (Chicken or Pork also works)
Pie Crust - package with 2 premade crust (set out to room temperature)
3 c gravy ( I make my gravy with homemade stock thickened with Masa)
Tips

Directions
Heat Oil in skillet
Saute onion, carrot & celery unil lightly browned
Add parsley, peas, potatoes, staek and gravy.
Set aside.
Lightly spray pie pans (I use 2 individual sized pie pans) with olive oil cooking spray
Cover bottom with pie crust.
Trim excess and save.
Pour filling into pan.
Cover top with trimmed pie crust pieces sealing edges together.
Bake in preheated 375 Degree oven for 50 - 60 miutes
Serving Size: makes 1 9 inch pie or 2 5 inch pies
