Ingredients

2 T Cumin
1 t Coriander Seed
1/4 t Garlic powder
1/4 t black pepper
Dash Cayenne pepper (adjust to your taste)
2 T Coconut oil
4 4 oz tilapia filets
4 soft Whole Wheat Tortillas (medium or taco size)
1/2 C shredded cabbage (I use coleslaw cabbage)
Salsa (I use my own homemade - no fat)
Red Onion, a few thin sliced pieces per taco
1 Avocado, sliced
Spicy Ranch (bottled) salad dressing
Tips
I don't really measure the spices. It's mainly ground Cumin. If you make it exactly as I've listed, it will be good. If you estimate the quantities, I'm sure it will still be good. This is one of my family's favorite meals. They ask for it quite often - sometimes more than once in a week. It's really a no-fail recipe.
Directions
Mix spices together and set aside.
In a large non-stick frying pan, heat coconut oil over medium-high heat. Add Tilapia filets. Sprinkle Tilapia filets with spices generously. Cook for about 4 minutes. Flip and sprinkle spices on other side then cook for an additional 3 to 4 minutes.
- While filets are cooking, assemble plates. Place one soft tortilla on each plate. Add to one side of each tortilla 1/4 of each: shredded cabbage, then salsa, then avocado, onion and spicy ranch.
- When Tilapia is cooked, add to already prepared soft taco then fold and eat.
